FAQ'S

 

  1. How long will my Heidi and Arthur Chocolates stay fresh? 

    We suggest that you store your chocolates in their original packaging at room temperature and keep it will stay at its pique for 2-3 weeks. If wrapped really well it can be stored in the freezer but must be gradually returned to room temperature by refrigerating for 24 hours it in the freezing wrapping and then let it stand at room temperature in its wrapping for 2-3 hours. We do not guarantee that it will be as delicious though as when first received. 

  2. When you see grey streaks or powder looking on the chocolate does that mean it is stale? 

    No. Although the appearance of the chocolate is compromised, this does not mean it is old. It could mean that the chocolate was not in the right temperature zone when it was being molded to its present state and this results in what is known as “sugar bloom” or “fat bloom”; where the cocoa butter in the chocolate separates when it is being made. The chocolate may taste just as delicious but the appearance and possibly the texture is not as appealing.

  3. What does the term “ganache” mean? 

    Ganache is the combination of cream and chocolate. When the ratio of cream to chocolate is higher the ganache is thinner and may be used for frosting or filling a cake. When more chocolate is added is denser and more suitable for a candy filling or to make a truffle

  4. What does it mean when chocolates have different percentages?

    The percentage refers to the amount of pure chocolate liquor that is used in making the chocolate. The term “liquor” is not alcohol but the pure chocolate that is extracted from the cacao pod. When the percentage is higher, the amount of sugar used in making the chocolate is less and the chocolate is less sweet.  

  5. How do you get those designs on the top of the chocolates? Do you paint each by hand?

    Most of the designs are printed in colored cocoa butter onto an acetate sheet and then “transferred” to the chocolate before it sets. These are called “transfer sheets”. However I do a good amount of hand painting onto the molds themselves as well

     
  6. If I have an allergy to nuts, can I still eat your chocolates that do not contain nuts? 

    We do not advise that anyone with a nut allergy partake in our chocolates. There is always a chance that traces of nuts are present.

  7. Are your products kosher?

    What about the marshmallows?We are certified by Star K as kosher dairy for all of our products. Our line of hot chocolate is pareve but it is suggested to make it with milk. It is delicious when mixed in with hot coffee though and then would still be considered pareve.

  8. Do you make anything that is sugar-free?

    We do offer delicious sugar free dark Belgian chocolate in some of our products. You can order sugar free barks, dipped fruit or vegetable chips. The chocolate is sweetened with maltitol. Our sugar free hot chocolate mix is sweetened with Splenda.
